Potato and Spinach weaning recipe
This recipe is from Riverford customer Sarah Edmunds. Sarah said “I am currently weaning my 6 month old baby and struggling to find many recipes which don't have swede, parsnips or similar winter veg in them. Many recipes have a mix of summer and winter veg which doesn't work either. This week I have experimented with my box contents and this recipe went down a treat. There was green goo everywhere afterwards but that was mainly because she was trying to get to the spoon too fast! Obviously this is a large amount but it is suitable for freezing in small pots or ice cube trays.”
1 small-medium onion, chopped
4 small-medium new potatoes, cubed
4 large handfuls of spinach, de-stalked and chopped
40g mild cheddar cheese
15-20g organic baby rice mixed with whole milk, made up to packet instructions
Place the onion and potatoes in a pan cover with water and boil until tender. Add the spinach and continue to cook until mushy. Most of the liquid should have evaporated off but if not, drain and reserve the cooking water. Put the cooked veggies, the baby rice and cheese in a jug or bowl and blend using a hand blender or a liquidiser if you have one. Add the reserved cooking liquid until you are happy with the consistency.
Roasted Winter Vegetables
April sees the beginning of the end of winter vegetables that have been in store so for the last of the winter flavours try some roasted vegetables.
Squash, beetroot, carrot, potatoes, onions, parsnip are all good for this.
Peel and cut into 2cm ish chunks place on a roasting tray or oven proof dish and sprinkle with olive oil.
Roast at 180 /gas 6 for 25mins - after this stage for the under 12 months remove some and either puree or mash with a fork.
For the remainder sprinkle with honey and add some cloves of garlic then return to the oven for 5 more minutes.
Sprinkle with sea salt and serve.
This is great on its own or as an accompaniment with good quality Organic sausages.
