Wash and dice the courgettes and tomatoes into 1cm pieces and finely dice an onion.
Gently fry the onion in a little olive oil until it is soft, add the diced courgette and tomato and cover with a close fitting lid.
Stew gently for 8 minutes.
At this time of year there are plenty of fresh herbs around, add a teaspoon of whatever you have (finely diced rosemary, thyme, basil, parsley, sage…) to add a new flavour to meal times.
Either puree or mash for babies and serve with new potatoes.
