Swiss Chard & Cous Cous
New Season Garlic is often called WET or FRESH garlic.
It is the early picking from the field and has a very mild flavour, so is a good new flavour to introduce to your baby.
The bulbs are harvested before the characteristic cloves have developed so you can chop the whole garlic and the green stem can be used in salads or stir frys.
Wash and shred the swiss chard (or pak choi) and shred a piece of new season garlic. Steam the greens and garlic for about 6 minutes until tender.
Make 100ml vegetable stock and bring it to the boil, add 100g cous cous and leave for 5 minutes to stand.
Puree a small amount of the greens and mix in with some of the cous cous, place in an oven-proof dish at one end.
Mix together the remaining shredded greens and cous cous and fill the dish.
Cover with grated parmesan or cheddar and grill until golden brown and ready to serve.
