Pasta with Squash Sauce
Seasonal Vegtable - Squash
Squash is readily available at this time of year, and despite differing shapes, sizes and names, they can all be treated the same in the kitchen.
Squash is ideal as a weaning food as it has a thicker texture when pureed, and a naturally sweet flavour which babies love.
Pasta With Squash Sauce
Can be eaten by the whole family . Older children who may not be prepared to eat squash roasted or mashed, will be unlikely to spot its flavour in this dish.
Cut open the squash, remove the skin and pips and roughly chop the flesh. Boil for 10 mins or so until soft.
Chop some or all of the following - onion, garlic, celery, tomato, leek and saute on a medium to low heat until soft. Add a tin of chopped tomatoes and heat gently.
Using either a hand blender or liquidizer, add the cooked squash and the sauteed vegetables and puree.
Remove some puree for a young baby and serve with baby pasta or rice and season the remainder for the family with salt and pepper.
Serve with the cooked pasta of your choice.
